At our previous August 11 Sustainability Roundtable (6 months ago!), confusion over certification/definitions was identified as a hot topic (see attached from Dr. Liz Thach).  There was also some discussion as to how sustainability is relative to time and location.  For example, some locations lend themselves to organic farming, while others do not. Yet, organic farming is only one piece of sustainable farming practices.  Water use is very different for a winery that produces 1,000 cases then for a winery that produces 1 million cases. Further, not all wineries have the same operations – crush, ferment, stainless steel storage, barrel cooperage, bottling, and case good storage – impacting their use of water and chemicals.  And, not all wineries have vineyards on site.  Finally, sustainability is an evolving process – improved practices occur over time.  So, what does this mean for you today at your vineyard or winery?"
